Okra Recipes

For okra lovers everywhere and for those who aren't familiar with the yummy pod, here are some recipes that will tingle your taste buds!  The most famous way to serve okra is fried.  The recipe below was taken from the Lake Murray-Irmo Woman's Club Cookbook published a few years ago.  The club is also the "exclusive" vendor for okra at the festival.  They serve it fried and it is delicious!

Buttermilk Fried Okra

1lb. fresh okra                      2 C. self-rising flour

1/2 tsp. salt                            Vegetable oil to depth of 1 inch, heated in skillet

1 1/2 C. buttermilk

     Wash and drain okra.  Remove tip and stem ends.  Cut in 3/4-inch pieces.  Sprinkle with salt; add buttermilk, and stir until well coated.  Let stand for 15 minutes.  Drain well; dredge in flour and deep fry in hot oil, 375 degrees F.  Cook until golden brown.  Drain on paper towels.  Serves 6.

NOTE:  For frying, a medium-sized saucepan works well.
